Ingredients
- 15 oz can pumpkin puree
- 3 large eggs
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1/2 cup molasses
- 1 1/2 cups sugar
- 1 Tbsp pumpkin pie spice
- 3 cups all-purpose flour
- 2 tsp baking powder
- 1 1/2 tsp salt
Directions
- Set your oven to 375 degrees. In a large bowl, whisk the pumpkin puree with the eggs, vegetable oil, milk, molasses, sugar, and pumpkin pie spice until the mixture looks completely smooth.
- In another bowl, stir together the flour, salt, and baking powder, making sure everything is evenly blended.
- Add the dry mixture to the wet mixture, then stir only until the batter comes together evenly. Go easy here, because overmixing is how you end up with a gummy loaf.
- Coat a loaf pan with non-stick spray, pour in the batter, and bake for 1 hour, or until a toothpick poked into the center comes out clean. Let the bread cool all the way before you slice it.
