Ingredients
- 2 Tablespoons olive oil
- 1 medium onion, diced
- 1 green pepper, diced
- 3 cloves garlic, minced
- 1 1/2 teaspoons salt
- 2 teaspoons ground cumin
- 1 pound ground turkey
- 1 can diced tomatoes
- 1 can pinto beans, rinsed and drained
- 1 can condensed tomato soup
- 1 cup water
- 1 can pumpkin purée
- Sour cream, for garnish, optional
- Chopped scallions, for garnish
Directions
- Set a Dutch oven or another sturdy large pot over medium-low heat. Pour in the olive oil, then add the onions, peppers, garlic, cumin, salt and ground turkey. Cook everything together, stirring as needed, until the turkey is cooked through.
- Stir in the rest of the ingredients, keeping the chips, sour cream and scallions aside. Let the chili bubble gently over low heat until the onions and peppers have softened, about 30 minutes.
- Taste and adjust with salt and pepper. To serve, ladle the chili into bowls and finish with sour cream, cheese and scallions.
