Quick and Easy Roasted Salmon with Rosemary-Garlic Rub

Ingredients

  • 4 T sea salt
  • 2 T dried cracked rosemary
  • 2 T granulated garlic, not garlic powder
  • 1 T coarse grind black pepper
  • 1 T Spike Seasoning
  • 1 piece salmon per person
  • 2 tsp. olive oil for each piece of salmon
  • 1-2 tsp. Rosemary-Garlic Rub for each piece of salmon

Directions

  1. For the rub, use a mortar and pestle, a blender, or a mini food processor. If your rosemary is not already cracked, place it in a small plastic food storage bag and crush it with a meat mallet or a heavy dish until the pieces are broken up.
  2. Add the salt and cracked rosemary to the food processor and run it for one minute, or a little longer, until the mixture is ground but still keeps a bit of texture.
  3. Add the garlic, black pepper, and Spike Seasoning, if you are using it, and process for about one minute more, until everything is finely ground and evenly combined.
  4. Set the salmon on a roasting pan or rack.
  5. Coat each side of the salmon with about 1 tsp. olive oil.
  6. Use about 1 tsp. of rub for each piece of salmon, divided between both sides, and sprinkle it over the fish. Rub it in with your fingers so the surface is evenly coated. Use closer to 1 tsp. total unless the piece of salmon is quite large, since the rub is salty.
  7. While the oven heats to 450F/230C, leave the seasoned fish out so it can come to room temperature.
  8. Roast the salmon without flipping it for 9-10 minutes, until it feels just lightly firm when pressed, not hard. If you like salmon a little underdone, check at 9 minutes; the thickness of the fish will affect the final cooking time.
  9. Serve Quick and Easy Roasted Salmon hot.
