Ingredients
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp freshly cracked black pepper
- 1 lb. boneless, skinless chicken
- 1 Tbsp cooking oil
- 1/4 cup BBQ sauce
Directions
- If you’re working with chicken breasts, start by evening them out so they cook quickly and at the same pace. Set the breasts on a cutting board under plastic wrap, then tap the thicker spots with a mallet or rolling pin until the pieces are 1/2 to 3/4-inch thick throughout. Chicken thighs can skip this part.
- In a small bowl, stir together the smoked paprika, garlic powder, salt, and pepper. Sprinkle that mixture over both sides of the chicken pieces.
- Set a large skillet over medium heat. When it’s hot, add the cooking oil and tilt the pan so the oil covers the bottom. Put in the seasoned chicken, then cook until nicely browned and cooked through, with an internal temperature of 165ºF, about 5-7 minutes per side.
- Take the skillet off the heat and brush BBQ sauce over both sides of the chicken. Give the chicken 5 minutes to rest before you slice it and/or serve it.
