Ingredients
- 2 Tbsp olive oil
- 1 med yellow onion
- 2 cloves garlic
- 2 can chickpeas, drained
- 1 can tomato sauce
- 1 cup water
- 1 Tbsp curry powder
- 1/2 bunch fresh cilantro
Directions
- Cut the onion into small dice and finely chop the garlic. In a large pot, warm the olive oil over medium heat, then cook the onion and garlic until they’re soft, about 3-5 minutes.
- Drain the chick peas, then add them to the pot along with the tomato sauce, water and curry powder. Stir until the sauce, spices and chick peas are well combined, then bring everything to a gentle simmer over medium heat.
- As the chick peas cook, rinse the cilantro and separate the leaves from the stems. Chop the leaves roughly, add them to the pot, and stir. Let the mixture keep simmering until the sauce thickens and reduces, about 20 minutes total. Stir every few minutes so the sauce doesn’t scorch or grab onto the bottom of the pot.
