Quick Lemon Garlic Fish

Ingredients

  • 2 3 oz. tilapia fillets
  • 1/4 bunch fresh parsley
  • 1 med lemon
  • 1 clove garlic
  • 1 Tbsp olive oil
  • 1/8 tsp salt
  • 15-20 cranks freshly cracked black pepper

Directions

  1. Give the parsley a rinse, then shake it over the sink to get rid of as much water as you can, keeping a grip on the stems. Strip off the leaves and drop them into a food chopper or processor. Halve the lemon, then add the zest and juice from 1 half to the chopper. Set aside the other half of the lemon for garnish. Add the garlic, olive oil, salt, and pepper as well. Run the chopper until the garlic and parsley are finely chopped and everything is blended together.
  2. Put the thawed fish fillets in a bowl or shallow dish, then spoon the lemon, garlic, and parsley mixture over them. Turn the fillets so both sides get coated. A little of the mixture may slide off, and that’s perfectly fine. Coat the grill surface with non-stick spray, then let it heat for 5 minutes.
  3. Lay the fish fillets on the heated grill, lower the lid, and set a timer for 2 minutes. After 2 minutes, take a look at the fish. If you’d like a little more browning, let it cook for 1 additional minute. Lift the fish off the grill carefully, since it will be tender. Serve with extra lemon slices if desired.
