Ingredients
- 2 Tbsp salted butter
- 3 Tbsp packed light-brown sugar
- 1 pinch salt
- 1 tbsp whisked egg
- 1/4 tsp vanilla extract
- 1/3 cup all-purpose flour
- 1/8 tsp baking soda
- 1/4 cup chocolate chips, divided
Directions
- Heat the oven to 350°F (180°C). Put the butter in a microwave-safe mixing bowl and microwave it until it is almost melted. Take it out just before the last bits disappear, then stir until smooth. You do not want the butter piping hot, since that can cook the egg and soften the chocolate chips as you mix.
- Add the brown sugar, salt, 1 tbsp egg, vanilla, flour, and baking soda to the melted butter. Stir with a spoon until the dough comes together and looks evenly mixed, about 20 – 30 seconds. Fold in 3 tablespoons of the chocolate chips.
- On a baking sheet lined with a Silpat or parchment paper, form the dough into a 3 1/2-inch disk. Scatter the remaining 1 Tbsp chocolate chips over the top and around the sides, pressing them in gently. Bake in the heated oven for 12 – 14 minutes, until the cookie is golden. Enjoy it warm, or cool it on a wire rack and then store it in an airtight container.
- For the 1 Tbsp egg, crack an egg into a small bowl and whisk until the yolk and white are fully blended, then measure out 1 Tbsp. Save the rest for another use, also known as tomorrow's breakfast.
