Ingredients

4 cups water

2/3 cup sugar

2 tablespoons freshly squeezed lemon juice

1 very big handful lemon verbena

Directions

Place all ingredients in a large pot over high heat and bring just to the boil. Remove from the heat and cover with a piece of plastic wrap. Allow to infuse for 30 minutes. Pass through a chinois strainer. Chill thoroughly. Pour mixture into a shallow pan; place in the freezer and freeze until solid. Scrape with a fork. .
