I just had some corn, a few tomatoes, and a bell pepper from the market and needed a way to use them.

Corn Macque Choux

Ingredients

  • 3 ears fresh corn
  • 1 tablespoon water
  • 1 medium tomato
  • 2 tablespoons butter
  • 1 bell pepper, diced
  • 1/2 medium onion, diced
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Cut the kernels off the corn with a large knife.
  2. Then, using a spoon, scrape the cob to remove as much of corn juice as possible.
  3. Bring a small pot of water to boil.
  4. Score an "x" on the bottom of the tomato with a knife.
  5. Plunge it into the boiling water for thirty seconds.
  6. Then remove, and when cool enough to handle, peel.
  7. Remove the seeds and chop.
  8. Melt the butter in a large skillet over medium-high heat.
  9. Add the corn, tomatoes, and water and cook, stirring occasionally for 3 minutes.
  10. Add the bell pepper, onion, sugar, salt, and black pepper.
  11. Stir frequently and cook for 12 minutes.
