Cinnamon Roll Sugar Cookie Bars

Ingredients

  • Salt
  • Butter
  • Eggs
  • Sugar
  • Granulated sugar
  • Brown sugar
  • Baking powder
  • Milk
  • Egg
  • Sour cream
  • Cornstarch
  • Powdered sugar
  • Cinnamon
  • Cream cheese
  • Flour
  • Vanilla
  • Cream

Directions

  1. Heat the oven to 350 degrees. In a mixing bowl, whisk the flour, cornstarch, cinnamon, baking powder, salt, and powdered milk for 30 seconds, then put the bowl aside.
  2. In the bowl of a stand mixer with the paddle attachment in place, beat the butter, brown sugar, and granulated sugar until the mixture looks light and fluffy, stopping now and then to scrape the bowl. Add the eggs 1 at a time, mixing each one in before adding the next. Mix in the sour cream and vanilla.
  3. Turn the mixer to low and gradually add the dry mixture, mixing only until the dough comes together. Butter a 13 by 9-inch baking dish. With buttered hands, gently pat and spread the cookie dough into an even layer in the dish.
  4. Bake until a toothpick poked into the middle comes out clean, 17 – 21 minutes. Cool completely, then cover with cream cheese frosting. Slice into squares and keep in an airtight container.
  5. For the cream cheese frosting: In the bowl of a stand mixer with the paddle attachment in place, beat the cream cheese and butter until light and fluffy, scraping the bowl occasionally. Mix in the vanilla. Turn the mixer to low, gradually add the powdered sugar, and keep mixing until the frosting is fluffy.
