Spinach and Feta Mashed Potatoes

Ingredients

  • Salt
  • Butter
  • Garlic
  • Milk
  • Pepper
  • Garlic powder
  • Cracked pepper
  • Feta cheese
  • Fresh spinach
  • Ice

Directions

  1. Scrub the potatoes thoroughly, then poke the skins in a few places with a fork. Put them on a plate that can go in the microwave and cook on high for 5 minutes. Check the middle with a fork; if the center is still crunchy, continue microwaving in 1 minute bursts until tender all the way through, about 8 minutes total.
  2. Wait a few minutes for the potatoes to cool slightly. Cut them into several pieces so they mash more easily, then move them to a large bowl. Add the butter, garlic powder, salt, freshly cracked pepper, and milk. Mash until the butter has melted and the seasonings are worked evenly through the potatoes.
  3. Add the fresh spinach and stir it through the potatoes. The heat already in the mash will soften the spinach partway. Stopping while the spinach is only partly wilted gives the potatoes more texture and volume.
  4. To finish, crumble the feta cheese over the top and gently fold it into the potatoes. Taste, then adjust with more salt, pepper, or butter if needed.
