Swamp Soup
A cozy tomato-vegetable soup finished with spinach and little cubes of Swiss that soften under the hot broth.

Ingredients
- Olive oil

- Garlic

- Diced tomatoes
- Vegetable broth
- Tomato sauce
- Carrot

- Oregano

Directions
- Chop the garlic finely, cut the onion into dice, peel the carrots and slice them, then slice the celery. Warm the olive oil in a large soup pot over medium heat, then add the onion, garlic, carrots, and celery. Cook for about 5 minutes, stirring now and then, until the onion has softened.
- Pour in the tomato sauce, diced tomatoes with their juices, vegetable broth, basil, and oregano. Stir everything together, then bring the soup up to a simmer.
- When the soup is simmering, drop in the frozen spinach straight from the freezer. Stir it through the hot soup until it has thawed, melted into the pot, and warmed all the way through.
- After the spinach is fully incorporated, taste the soup and season with salt if it needs it. You may not need any, depending on how salty your canned goods and vegetable broth are.
- Cut the swiss cheese into small cubes. Put a small handful of cheese cubes in each bowl, ladle the hot soup over them, and serve.
