Ingredients

1 tablespoon olive oil

1 large onion, diced

2 cloves garlic, minced

2 bell peppers, diced

1 jalapeno pepper, seeded and diced

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1/4 teaspoon cayenne pepper

3 cups vegetable broth or water

2 cans black beans, drained and rinsed

2 cans kidney beans, drained and rinsed

1 can diced tomatoes with green chilies, undrained

1 cup frozen corn kernels

Salt and freshly ground black pepper to taste

Optional toppings: shredded cheese, sour cream, chopped fresh cilantro or parsley

Directions

Set the Instant Pot to the sauté setting and add the olive oil. Once hot, add the onion, bell peppers, jalapeno pepper , garlic, cumin, oregano, chili powder and cayenne pepper . Sauté for 5 minutes until vegetables are softened. Add the vegetable broth or water, diced tomatoes with green chilies , corn kernels, kidney beans and black beans. Stir to combine. Secure the lid on the Instant Pot and set it to manual high pressure for 10 minutes. When finished cooking, allow a natural pressure release for 10 minutes before manually releasing any remaining pressure. Taste and adjust seasonings as desired . Serve with optional toppings such as shredded cheese, sour cream, chopped fresh cilantro or parsley if desired. Enjoy!.
