Healthy Banana Pancakes

Ingredients

  • Eggs
  • Baking powder
  • Milk
  • Baking soda
  • Egg
  • Cinnamon
  • Flour
  • Maple syrup
  • Ground
  • Whole

Directions

  1. In a large bowl, whisk together the whole wheat pastry flour, cinnamon, baking soda, baking powder, salt and ground flaxseed meal so the dry ingredients are nicely distributed.
  2. In a medium bowl, use the back side of a fork to mash the bananas. Whisk in the maple syrup and eggs until the mixture is smooth, then add the milk and whisk again.
  3. Pour the banana mixture over the flour mixture, then stir until the batter comes together.
  4. Warm a nonstick skillet over medium heat, or set a griddle to 375 degrees F. Scoop the batter onto the hot surface with a ¼ cup measuring cup. Once bubbles appear on the tops, flip the pancakes and cook the other side until they are done all the way through.
  5. Keep going with the rest of the batter. Serve the pancakes with fresh fruit, nuts and/or maple syrup, if desired.
