Healthy Banana Pancakes
Whole wheat banana pancakes get gentle sweetness from mashed bananas and maple syrup, with cinnamon and flaxseed in the batter.

Directions
- In a large bowl, whisk together the whole wheat pastry flour, cinnamon, baking soda, baking powder, salt and ground flaxseed meal so the dry ingredients are nicely distributed.
- In a medium bowl, use the back side of a fork to mash the bananas. Whisk in the maple syrup and eggs until the mixture is smooth, then add the milk and whisk again.
- Pour the banana mixture over the flour mixture, then stir until the batter comes together.
- Warm a nonstick skillet over medium heat, or set a griddle to 375 degrees F. Scoop the batter onto the hot surface with a ¼ cup measuring cup. Once bubbles appear on the tops, flip the pancakes and cook the other side until they are done all the way through.
- Keep going with the rest of the batter. Serve the pancakes with fresh fruit, nuts and/or maple syrup, if desired.
