1 head of romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup black olives, pitted and halved

1/4 cup feta cheese crumbles

2 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste


Whisk all ingredients together in a bowl until combined.   Taste and add additional sweetener if desired.   Use immediately or refrigerate in a sealed container for up to 3 days. Combine all ingredients in a large salad bowl, drizzle evenly with the vinaigrette, and toss until evenly combined.   Serve sprinkled with extra Parmesan cheese and enjoy!.
