Chicken Satay

Chicken Satay

Ingredients

  • Butter
  • Garlic
  • Sugar
  • Brown sugar
  • Soy sauce
  • Sesame oil
  • Rice vinegar
  • Chicken breasts
  • Peanut butter

Directions

  1. Stir the garlic, ginger, rice vinegar, soy sauce, brown sugar, peanut butter and sesame oil together in a large bowl. Put the marinade to the side.
  2. Cut the chicken breasts lengthwise into slim strips. Place the chicken in the bowl with the marinade and toss until it is thoroughly coated. Chill for 1 hour, or leave it refrigerated as long as overnight.
  3. When you are ready to grill, heat one side of the grill to high and the other side to low. Slide the chicken strips onto bamboo skewers, arranging the meat as flat as possible so it cooks evenly.
  4. Put the skewers on the hot side of the grill first, cooking them for 4 minutes on each side. Transfer them to the cooler side, close the grill, and cook until done, about 1-3 minutes longer, depending on how thick the chicken is.
  5. Scatter chopped roasted peanuts over the chicken before serving.
