Preheat the oil in a deep-fryer to 375 degrees F .
In a medium bowl, mix together the egg, milk, vegetable oil, sugar, salt and baking powder. Gradually stir in the flour until a thick batter is formed. Fold in the diced apples.
Drop spoonfuls of batter into the hot oil and fry for 3 to 5 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Place cinnamon sugar in a shallow dish or plate. Roll each fritter in the cinnamon sugar to coat evenly. Serve warm. Enjoy!.
