Grilled Teriyaki Shrimp Kebabs

Ingredients
1 lb. large shrimp, peeled and deveined
1/4 cup teriyaki sauce
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon freshly grated ginger
1/4 teaspoon ground black pepper
2 bell peppers, cut into 1 inch pieces
1 red onion, cut into 1 inch pieces
8 wooden skewers
Directions
Soak 8 wooden skewers in water for at least 30 minutes. Preheat the grill to medium-high heat. In a large bowl, combine 1 red onion cut into 1 inch pieces, 2 bell peppers cut into 1 inch pieces, 1/4 teaspoon ground black pepper, 1 teaspoon freshly grated ginger, 2 cloves garlic minced, 2 tablespoons olive oil and 1/4 cup teriyaki sauce. Mix until all ingredients are evenly coated. Thread the shrimp onto the skewers alternating with the vegetables. Place on the preheated grill and cook for 3-4 minutes per side or until shrimp is cooked through and vegetables are tender crisp. Serve with extra teriyaki sauce if desired. Enjoy!.
