How to make?
Ingredients
1 can chickpeas, drained and rinsed
1/4 cup fresh parsley, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon baking powder
Salt and pepper to taste
3 tablespoons olive oil
1/4 cup all purpose flour
2 cups cooked quinoa
2 cups baby spinach leaves
1/2 cup diced cucumber
1/4 cup crumbled feta cheese
For the Tahini Sauce:
3 tablespoons tahini paste
3 tablespoons lemon juice
3 tablespoons water
Directions
Preheat the oven to 450°F. Place a large skillet or pot over high heat. When hot, add the spinach, in batches if necessary. Stir until collapsed and most of the moisture has evaporated. Transfer to a cutting board, and chop well. The more chopped, the better.
