Ingredients
1/2 head of cabbage, shredded
1/4 cup lime juice
2 tablespoons olive oil
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup roasted peanuts, roughly chopped
2 tablespoons fresh cilantro, chopped
Directions
In a medium bowl, combine the cilantro, peanuts, black pepper, salt, honey, olive oil and lime juice. Mix until everything is well combined. Add the shredded cabbage to the mixture and mix until everything is evenly coated with the dressing. Heat a large skillet over medium-high heat and add the coleslaw mixture to it. Cook for 3-4 minutes or until the cabbage is slightly blistered and softened. Stir occasionally while cooking. Serve warm or chilled and enjoy!.
