Sparkling Cranberries

Ingredients

1 cup fresh cranberries

1/2 cup sugar

1/2 cup water

1/4 teaspoon almond extract

1/4 teaspoon vanilla extract

3 tablespoons orange juice concentrate, thawed

1 bottle sparkling white wine or champagne

Directions

In a medium saucepan, combine the orange juice concentrate, vanilla extract, almond extract, water and sugar. Stir until the sugar is dissolved. Add the cranberries to the saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer for 10 minutes or until the cranberries have softened and popped open. Remove from heat and let cool completely before transferring to a bowl or jar with a lid. Refrigerate for at least 2 hours or overnight. When ready to serve, pour sparkling white wine or champagne into glasses filled with ice cubes and top with chilled cranberry mixture. Enjoy!.
