Sparkling Cranberries
Around the holidays these pretty, sugared, sparkling cranberries are perfect.

Ingredients
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/2 cup water
- 1/4 teaspoon almond extract
- 1/4 teaspoon vanilla extract
- 3 tablespoons orange juice concentrate, thawed
- 1 bottle sparkling white wine or champagne
Directions
- In a medium saucepan, combine the orange juice concentrate, vanilla extract, almond extract, water and sugar. Stir until the sugar is dissolved.
- Add the cranberries to the saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer for 10 minutes or until the cranberries have softened and popped open.
- Remove from heat and let cool completely before transferring to a bowl or jar with a lid. Refrigerate for at least 2 hours or overnight.
- When ready to serve, pour sparkling white wine or champagne into glasses filled with ice cubes and top with chilled cranberry mixture. Enjoy!
