How to make?
Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon garam masala
1/4 teaspoon cayenne pepper
3 cups spinach, chopped
2 cups cubed paneer cheese
1 cup coconut milk or heavy cream
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, coriander, garam masala, and cayenne pepper and cook for 1 minute more. Add the spinach and cook until wilted, about 3 minutes. Add the coconut milk or cream and bring to a simmer. Add the paneer cheese or tofu cubes and simmer for 10 minutes, stirring occasionally. Season with salt and pepper to taste before serving.
