, Olive oil, Salt, Pepper, Brussels sprouts, Apples, Tofu Preheat oven to 375°F . In a small bowl, mix together the juice of one lemon and 2 tablespoons of water. Set aside. In a large bowl, combine 2 tablespoons of olive oil with 1/2 teaspoon each of salt and pepper. Add the Brussels sprouts and apples and toss to coat in the oil mixture. Spread the vegetables on a baking sheet lined with parchment paper or aluminum foil and roast for 25 minutes or until golden brown and tender. Meanwhile, heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. When hot, add the tofu cubes and cook for 5 minutes or until lightly browned on all sides. Add the lemon juice mixture to the pan and stir to combine. Cook for an additional 3 minutes or until most of the liquid has evaporated. Remove from heat and set aside. Once the vegetables are done roasting, add them to the skillet with the tofu and stir to combine everything together. Serve warm!.
