1 large butternut squash, peeled and cut into cubes
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon dried rosemary
Salt and pepper to taste
Juice of 1 lime
Freshly chopped parsley for garnish
Directions
Preheat oven to 375 degrees F .
In a small bowl, mix together the lime juice, rosemary, cumin, olive oil, salt and pepper.
Place the cubed butternut squash in a large bowl and pour the lime juice mixture over it. Toss to coat evenly.
Spread the butternut squash cubes on a baking sheet lined with parchment paper or aluminum foil. Roast for 25-30 minutes or until tender and lightly browned.
Serve warm with freshly chopped parsley for garnish . Enjoy!.
