Preheat oven to 350°F . Grease a 12-cup muffin tin with olive oil.
In a medium bowl, combine parsley, bell pepper, cheese, and ham. Mix until ingredients are evenly distributed.
Crack eggs into a separate bowl and whisk until combined. Add salt and pepper to taste.
Divide the ham and cheese mixture evenly among the muffin cups, then pour egg mixture over top of each cup until almost full.
Bake for 15-20 minutes or until eggs are set in the center and lightly golden on top. Let cool before serving. Enjoy!.
