Ingredients

2 large tomatoes, diced

1 cucumber, diced

1/2 red onion, diced

1/4 cup fresh parsley, chopped

2 tablespoons fresh mint leaves, chopped

2 tablespoons olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon sumac

Salt and pepper to taste

4 pieces of pita bread, cut into cubes and lightly toasted in the oven

Directions

Preheat oven to 350°F . Place the cubed pita bread on a baking sheet and lightly toast in the oven for 10 minutes, or until golden brown. Set aside to cool. In a large bowl, combine the salt, pepper, sumac, lemon juice, olive oil, mint leaves, parsley, red onion, cucumber and tomatoes. Mix well. Add the cooled pita cubes to the salad and mix again until everything is evenly distributed. Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for up to 2 hours before serving. Enjoy!.
