Coconut-Creamed Corn and Grains

Ingredients

2 tablespoons olive oil

1 cup uncooked quinoa

1 cup uncooked bulgur wheat

2 cloves garlic, minced

1 can coconut milk

2 cups fresh or frozen corn kernels

1 teaspoon ground cumin

Salt and freshly ground black pepper to taste

2 tablespoons chopped fresh cilantro leaves

Directions

Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, stirring constantly. Add the corn, cumin, salt and pepper to taste, and cook for 5 minutes, stirring occasionally. Add the coconut milk and bring to a simmer. Reduce heat to low and add the bulgur wheat and quinoa. Simmer for 15 minutes or until grains are tender and liquid is absorbed. Stir in cilantro leaves and serve warm.
