Ingredients
1 red bell pepper, diced
2 tablespoons capers
2 tablespoons olives, pitted and chopped
3 tablespoons olive oil
Salt and pepper to taste
2 cloves garlic, minced
1 teaspoon dried oregano
Directions
, 1 head cauliflower, cut into slices
Preheat oven to 400 degrees F .
In a small bowl, mix together oregano, garlic, salt and pepper.
In a large bowl, combine olive oil, olives, capers and red bell pepper. Add the cauliflower slices and toss to coat with the mixture.
Spread the cauliflower slices on a baking sheet in a single layer. Sprinkle with the oregano mixture.
Bake for 20 minutes or until the cauliflower is tender and lightly browned. Serve warm or at room temperature. Enjoy!.
