Butternut Squash Black Bean Soup

Ingredients

1 large butternut squash, peeled and cubed

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

4 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1 can black beans, drained and rinsed

Salt and pepper to taste

Directions

Preheat a large pot over medium heat and add the olive oil. Add the onion and garlic and sauté for 3-4 minutes until softened. Add the butternut squash, smoked paprika, chili powder, cumin, salt and pepper to taste and stir to combine. Cook for 5 minutes stirring occasionally. Pour in the vegetable broth and bring to a boil then reduce heat to low and simmer for 15-20 minutes or until the squash is tender. Add the black beans and cook for an additional 5 minutes until heated through. Using an immersion blender, blend the soup until smooth or transfer it to a blender in batches if needed . Serve warm with your favorite toppings!.
