Ingredients
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper, to taste
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh mint leaves
Juice of 1 lemon

, 2 cans chickpeas, drained and rinsed Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. In a large bowl, combine lemon juice, mint leaves, feta cheese, salt, pepper, smoked paprika, cumin and garlic. Stir in olive oil until combined. Add chickpeas to the bowl and toss to coat evenly with the mixture. Spread the chickpeas onto the prepared baking sheet in an even layer. Bake for 20 minutes or until golden brown and crispy on the outside. Serve warm or at room temperature. Enjoy!.
