Ingredients

1 large head of cauliflower, cut into florets

2 tablespoons olive oil

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

3 ounces cream cheese, softened

1/2 cup shredded cheddar cheese

2 tablespoons chopped fresh parsley or chives

Directions

Preheat oven to 375°F . Place cauliflower florets on a baking sheet and drizzle with olive oil. Sprinkle with salt, pepper, onion powder, and garlic powder. Roast for 25 minutes or until tender. In a medium bowl, mix together cream cheese, cheddar cheese, parsley or chives , and salt and pepper to taste. Remove cauliflower from the oven and reduce heat to 350°F . Place roasted cauliflower in a large bowl and mash with a potato masher or fork until desired consistency is reached. Add cream cheese mixture to the mashed cauliflower and stir until combined. Transfer mixture to an 8x8-inch baking dish and spread evenly over the bottom of the dish. Bake for 20 minutes or until golden brown on top. Serve warm. Enjoy!.
