Ingredients

6 large potatoes, peeled and diced

1/2 cup onion, chopped

2 cloves garlic, minced

1/4 teaspoon salt

1/4 teaspoon pepper

8 eggs, beaten

1 cup shredded cheddar cheese

2 tablespoons butter or margarine

2 tablespoons olive oil

Directions

Preheat oven to 350 degrees F . Grease a 9-inch pie plate with butter or margarine. Heat olive oil in a large skillet over medium heat. Add garlic and onion; cook and stir until softened, about 5 minutes. Add potatoes; cook and stir until lightly browned, about 10 minutes. In a large bowl, whisk together eggs, salt, and pepper. Stir in cheese and potato mixture. Pour into prepared pie plate. Dot top with remaining butter or margarine. Bake in preheated oven for 25 to 30 minutes, or until center is set and top is golden brown. Let cool for 10 minutes before serving. Enjoy!.
