Ingredients
2 red bell peppers, diced
1/4 cup green olives, pitted and sliced
1/4 cup pine nuts
3 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Directions
, 1 head cauliflower, cut into florets
Preheat oven to 400 degrees F .
In a large bowl, mix together garlic, olive oil, pine nuts, green olives and red bell peppers.
Add the cauliflower florets and toss to coat with the mixture.
Spread the cauliflower onto a baking sheet and season with salt and pepper to taste.
Roast in preheated oven for 25 minutes or until golden brown and tender. Serve warm.
