Pop-Eye Eggs with Cheese and Salsa

Ingredients

4 eggs

2 tablespoons of butter

1/4 cup of shredded cheese

1/4 cup of salsa

Salt and pepper to taste

Directions

Heat a large skillet over medium heat and add the butter. Crack the eggs into the skillet and season with salt and pepper to taste. Cook until the whites are set, about 3 minutes. Sprinkle the cheese and salsa over the eggs and cook for an additional 2 minutes or until the cheese is melted and eggs are cooked through. Serve immediately with toast or tortillas, if desired.
