Ingredients
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 tablespoons olive oil
3/4 cup grated zucchini, drained and squeezed dry
3/4 cup shredded sharp cheddar cheese
1 can diced green chiles, drained
2 large eggs, lightly beaten
3/4 cup buttermilk
Directions
, 1 cup all-purpose flour Preheat oven to 375 degrees F . Grease 12 muffin cups or line with paper liners. In a medium bowl, whisk together the buttermilk, eggs, green chiles, cheese, zucchini, olive oil, pepper and salt. In a separate bowl, mix together the baking soda, baking powder and flour. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Divide the batter evenly among the prepared muffin cups. Bake for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in pan for 5 minutes before transferring to a wire rack to cool completely.
