Skillet Chicken with Lemon, Green Olives, and Capers

Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons butter
1/2 cup chicken broth
Juice of 1 lemon
1/4 cup green olives, sliced or chopped
2 tablespoons capers, drained
Directions
Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder. Place them in the skillet and cook for 5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside. Add the butter to the skillet and melt it over medium heat. Add the capers, olives, lemon juice, and chicken broth to the pan and stir to combine. Simmer for 3-4 minutes until slightly thickened. Return the chicken breasts to the skillet and spoon some of the sauce over them. Cover with a lid and simmer for an additional 5 minutes or until cooked through. Serve hot with extra sauce spooned over top if desired. Enjoy!.
