Sweet Potatoes and Mushrooms

Ingredients
2 large sweet potatoes, peeled and diced
1 tablespoon olive oil
1/2 onion, diced
2 cloves garlic, minced
8 ounces mushrooms, sliced
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Directions
Preheat oven to 375 degrees F . In a large bowl, combine parsley, thyme, salt and pepper. Add mushrooms, garlic, onion and olive oil; mix until all ingredients are evenly coated. Place sweet potatoes in a 9x13 inch baking dish and top with mushroom mixture. Bake for 30 minutes or until potatoes are tender and mushrooms are golden brown.
