Ingredients
• 1 lb ground beef
• 1/2 cup diced onion
• 1/2 cup diced bell pepper
• 2 cloves garlic, minced
• 2 cups shredded cheese
• 4 large eggs
• 1/2 cup heavy cream
• 1 teaspoon chili powder
• 1 teaspoon cumin
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 2 tablespoons chopped fresh cilantro
Directions
Preheat the slow cooker to low heat. In a large skillet, cook the ground beef over medium-high heat until it is no longer pink. Drain off any excess fat and transfer the cooked beef to the slow cooker. Add in the bell pepper, onion, garlic, cumin, chili powder, salt and pepper and stir to combine. In a separate bowl, whisk together the eggs and heavy cream until combined. Pour this mixture over the beef in the slow cooker and stir to combine. Sprinkle with cheese and cilantro . Cover and cook on low for 4-6 hours or until set in the center when tested with a knife or toothpick. Serve warm with your favorite toppings such as sour cream or guacamole! Enjoy!.
