Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
3/4 cup pizza sauce
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Optional toppings: pepperoni, mushrooms, olives, bell peppers
Directions
Preheat oven to 375°F . In a large bowl, combine cauliflower florets, olive oil, salt and pepper, onion powder, garlic powder and Italian seasoning. Toss until evenly coated. Spread the cauliflower onto a baking sheet lined with parchment paper or a silicone baking mat. Bake for 25 minutes or until golden brown and tender. Meanwhile, in a medium bowl, mix together pizza sauce, Parmesan cheese and mozzarella cheese. Set aside. Once the cauliflower is done baking, transfer it to an 8x8 inch baking dish . Pour the pizza sauce mixture over the top of the cauliflower and spread it out evenly with a spoon or spatula. Top with optional toppings such as pepperoni, mushrooms, olives or bell peppers if desired. Sprinkle with additional Parmesan cheese if desired. Bake for an additional 15-20 minutes or until cheese is melted and bubbly around the edges of the dish. Let cool for 5 minutes before serving warm! Enjoy!.
