Mediterranean Roasted Cauliflower Salad

Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/4 teaspoon cumin
Salt and pepper to taste
3 tablespoons fresh lemon juice
2 tablespoons chopped parsley
1/4 cup crumbled feta cheese
1/4 cup sliced kalamata olives
1/4 cup diced red onion
Directions
Preheat oven to 400 degrees F . In a large bowl, combine red onion, olives, feta cheese, parsley, lemon juice, salt and pepper, cumin, smoked paprika, garlic powder and olive oil. Mix until all ingredients are evenly distributed. Add cauliflower florets to the bowl and toss until all pieces are evenly coated with the mixture. Spread the cauliflower onto a baking sheet lined with parchment paper or aluminum foil. Bake for 20-25 minutes or until golden brown and tender when pierced with a fork. Serve warm or at room temperature as part of a salad or side dish. Enjoy!.
