French Cafe au Lait Creme Brulee

2 cups heavy cream

1/2 cup granulated sugar

5 egg yolks

2 tablespoons instant coffee powder

1 teaspoon vanilla extract

Pinch of salt

1/4 cup packed light brown sugar


Preheat oven to 350°F . In a medium bowl, mix together the brown sugar, salt, vanilla extract, and instant coffee powder until combined. In a separate bowl, whisk together the egg yolks and granulated sugar until light and fluffy. Slowly add the cream to the egg mixture while whisking continuously. Add the brown sugar mixture to the cream and egg mixture and stir until combined. Pour the custard into 6 ramekins or custard cups and place them in a baking dish filled with 1 inch of hot water. Bake for 30 minutes or until set but still slightly jiggly in the center. Allow to cool completely before refrigerating for at least 4 hours or overnight before serving with a sprinkle of extra coffee powder on top if desired. Enjoy!.
