In a large skillet over medium heat, cook the sausage until it is browned and cooked through. Remove from the skillet and set aside.
In the same skillet, add the carrots and onion and cook until softened, about 5 minutes. Add in the garlic and cook for an additional minute.
Transfer the cooked vegetables to a 6-quart slow cooker. Add in the lentils, sausage, spinach and 4 cups of water or broth . Stir to combine.
Cover and cook on low for 8 hours or high for 4 hours until lentils are tender. Serve warm with crusty bread or crackers if desired. Enjoy!.
