Grilled Stuffed Portobello Mushrooms

Ingredients
4 large portobello mushrooms
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked quinoa
1 cup cooked spinach, chopped
1/2 cup diced red bell pepper
1/2 cup diced onion
1/3 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
Directions
Preheat an outdoor grill to medium-high heat. In a large bowl, combine the parsley, feta cheese, onion, bell pepper, spinach, quinoa, black pepper, salt and garlic powder. Mix until all ingredients are evenly distributed. Brush each portobello mushroom with olive oil on both sides and place them on the preheated grill. Grill for 5 minutes per side or until mushrooms are tender and lightly charred. Remove mushrooms from the grill and fill each one with the quinoa mixture. Place back on the grill and cook for an additional 5 minutes or until heated through. Serve warm.
