Philly Cheesesteak Stuffed Mushrooms

Ingredients
12 large mushrooms, stems removed and reserved
1/2 teaspoon olive oil
1/4 cup diced onion
1/4 cup diced green bell pepper
3 ounces thinly sliced deli roast beef, cut into small pieces
1/4 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
3 tablespoons cream cheese, softened
2 tablespoons mayonnaise
2 tablespoons grated Parmesan cheese
2 tablespoons shredded mozzarella cheese
Directions
Preheat oven to 375 degrees F . Grease a baking sheet with cooking spray. In a medium bowl, mix together mozzarella cheese, Parmesan cheese, mayonnaise, cream cheese, salt, pepper and garlic powder until well blended. Stir in roast beef, bell pepper and onion. Heat olive oil in a large skillet over medium heat. Add mushroom stems and cook for 2 minutes or until softened. Remove from heat and set aside. Fill each mushroom cap with the beef mixture and place on the prepared baking sheet. Bake for 15 minutes or until mushrooms are tender and filling is golden brown. Serve warm. Enjoy!.
