Curry Roasted Cauliflower

Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
2 teaspoons curry powder
1 teaspoon garlic powder
1/2 teaspoon ground cumin
Salt and pepper to taste
Directions
Preheat oven to 425°F . In a small bowl, mix together the cumin, garlic powder, curry powder, salt and pepper. Place the cauliflower florets in a large bowl and drizzle with olive oil. Sprinkle the spice mixture over the top and toss to coat evenly. Spread the cauliflower onto a baking sheet lined with parchment paper or foil and bake for 20-25 minutes until golden brown and tender. Serve warm.
