Ingredients

2 tablespoons olive oil

1 large onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon dried oregano

4 cups vegetable broth

2 cups roasted and shelled walnuts or pecans

2 tablespoons tomato paste

Salt and pepper to taste

Chopped fresh parsley for garnish

Directions

In a food processor, process nuts, scraping down sides once or twice during processing, until they form a thick paste, about 3 minutes. Scrape nut paste into a medium bowl.
