, Bacon, Eggs, Parmesan Cheese Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and set aside. In a large skillet over medium heat, cook the bacon until crisp. Remove from the pan and set aside on a plate lined with paper towels to drain off any excess fat. Reserve 2 tablespoons of the bacon fat in the skillet. In a bowl, whisk together the eggs and Parmesan cheese until combined. Set aside. Heat the reserved bacon fat in the skillet over medium heat and add the cooked pasta to it. Stir to combine and cook for 1 minute or until heated through. Reduce heat to low and add the egg mixture to the pan, stirring constantly for 1-2 minutes or until creamy and thickened slightly . Add back in the cooked bacon pieces and stir to combine everything together well before serving immediately with extra Parmesan cheese if desired!.
