Directions
Preheat oven to 350 degrees F . Grease cookie sheets.
In a medium bowl, combine 1 cup ground almonds, 1/4 teaspoon lemon zest, and 1/4 teaspoon almond extract.
In a small bowl, beat together 1/2 cup butter and 3/4 cup white sugar until light and fluffy. Beat in 2 tablespoons of lemon juice until well blended.
Gradually stir the almond mixture into the butter mixture until well blended. Drop by teaspoonfuls onto prepared cookie sheets.
Bake for 10 to 12 minutes in preheated oven, or until lightly browned on the edges. Cool on wire racks before glazing with Lemon Glaze .
In a small bowl, mix together 2 tablespoons of lemon juice and 1 cup confectioners sugar until smooth and creamy. Drizzle over cooled cookies before serving.
