Ingredients

1/2 cup coconut flour

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup melted butter or coconut oil

3/4 cup coconut sugar or brown sugar

2 eggs, beaten

1 teaspoon vanilla extract

3/4 cup semi sweet chocolate chips

3/4 cup dark chocolate chips

Directions

Preheat oven to 350°F . Line a baking sheet with parchment paper. In a medium bowl, combine dark chocolate chips, semi-sweet chocolate chips, and vanilla extract. Set aside. In a large bowl, whisk together eggs and coconut sugar or brown sugar until combined. Add melted butter or coconut oil and mix until smooth. Add salt and baking soda to the wet ingredients and mix until combined. Slowly add in the coconut flour and mix until all ingredients are incorporated. Fold in the chocolate chip mixture until evenly distributed throughout the dough. Scoop 1 tablespoon of cookie dough onto the prepared baking sheet, leaving 2 inches between each cookie for spreading during baking time. Bake for 10-12 minutes or until edges are golden brown and centers are set but still soft to touch. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving or storing in an airtight container at room temperature for up to 5 days.
