Ingredients
2 tablespoons vegetable oil
1 tablespoon minced garlic
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
4 cups vegetable broth
2 tablespoons fish sauce
2 tablespoons lime juice
1 can coconut milk
8 ounces udon noodles, cooked according to package instructions
8 ounces mushrooms, sliced or quartered
Chopped fresh cilantro, for garnish
Directions
Heat the vegetable oil in a large pot over medium heat. Add the garlic and ginger and cook for 1 minute, stirring constantly. Add the mushrooms and cook for 2 minutes, stirring occasionally. Add the vegetable broth, coconut milk, fish sauce, lime juice, and red pepper flakes to the pot and bring to a boil. Reduce heat to low and simmer for 10 minutes. Add the cooked udon noodles to the soup and simmer for an additional 5 minutes or until heated through. Serve hot with chopped fresh cilantro as a garnish if desired. Enjoy!.
